Our wines are produced primarily from 4-8 year old vinifera grapevines grown in our own Mesilla Valley Vineyard 5 miles south of Las Cruces.
The white wines are typically crushed and destemed, left to cold soak for 12 hours then pressed, cold fermented and stored in stainless steel before bottling to retain a maximum of the fruit bouquet and character in the finished wines.
The reds are cold-soaked for up to 24 hours between crushing and the start of fermentation. Acid and sugar adjustments if needed are performed at this time. Fermentations are temperature controlled to preserve the wines’ fruitiness. The young wines are then pressed off the skins and allowed to settle in stainless steel tanks for several weeks prior to racking into both French and American oak barrels. There they will spend 18 to 30 months, depending on the wine, before final blending and bottling.
